Pineapple Strawberry cake! :)

So. I made a cake. >.<
It is based off of the recipe Tanya Burr made on her YouTube channel called 'Lemon Drizzle Cake' which I have made many times since I first saw her video. Today, sadly, I didn't have enough eggs, any lemons, nor powdered sugar so it has been modified! To something as yummy as the first! Here's the link to her delicious  recipe:

Pineapple Strawberry Cake

For the cake:
-four eggs
-340 grams of self-rising flour
-340 grams butter, softened
-340 grams granulated sugar
-2 tsp baking powder 
-two bananas, mashed
-1 tbs vanilla extract
-6 large strawberries, diced

For the icing:
-15 oz can crushed pineapple 
-5 oz diced strawberries, macerated with a bit of sugar
-1/2 cup sugar
-1/3 cup cornstarch 
-1/8 tsp salt
-2 tbs salted butter
-2 tbs vanilla extract


Preheat oven to 350 degrees, Fahrenheit.
Beat butter and sugar in a mixer until smooth. Add mashed bananas and eggs and mix until smooth. Then add flour, baking powder, vanilla extract, and strawberries. Beat until all of the mixture is wet, making sure you're not pulverizing the strawberries to death because we still want little bits of them in the cake. Pour your cake batter into two greased 9 inch cake pans and bake for about 40 minutes. Make sure the tops are golden before you pull them out! Let them cool in their pans for ten minutes then remove them from the pans, transferring the cakes to a cooling rack. Let them fully cool there as you make the icing!

In a small saucepan, combine the pineapple, strawberries, salt, sugar, and cornstarch and cook on medium heat, stirring constantly until it thickens. Remove from heat and stir in butter and vanilla until they are completely mixed in. Time to frost the cake!

Place the first layer of cake on a platter and spoon a little less than half the icing mixture, still hot, onto the middle of the cake. Push around the icing in messy circles until the whole cake is covered and the icing comes out of the sides all around. Now place the next cake round on top and repeat with the rest of the icing. It should look like a messy icing job with some icing falling off the sides and down onto the platter. Don't try to ice the sides with this frosting- it'll fall. Aaaand enjoy!!
